A perfect accompaniment for pre-dinner drinks, these scrumptious peanuts can be prepared several months in advance and stashed in the freezer for nibbling on later.
Makes around 8 servings
Also great coarsely chopped and sprinkled over salads or stir-frys.
1 tbsp (15 ml) brown sugar
1 tsp (5 ml) salt
½ tsp (2ml) cayenne pepper
½ tsp (2ml) chilli powder
2 tsp (10 ml) peanut oil
250g (9oz) unsalted, American peanuts
Preheat oven to 350°F (180°C). In a medium bowl, stir brown sugar with salt, cayenne and chilli powder. Stir in oil. Add peanuts and stir until evenly coated.
Turn onto a baking sheet. Bake in preheated oven, stirring occasionally, until nuts are toasted and fragrant, about 10 minutes. Turn into a bowl, taste and toss with additional salt if necessary. Serve warm or at room temperature. Peanuts will keep well stored refrigerated in an airtight container for several weeks or freeze.
