Mange tout and
peanut salad stir-fry

This stir-fry salad makes a refreshing change to salad greens and tasty alternative to standard vegetables. The honey adds a slightly sweet flavour and wonderfully glossy appearance. Serve on the side with any main meal, or for a quick and light nutritious pick-me-up.

Preparation time: none. Cooking time: 5-10 minutes. Serves 4

Ingredients

80g American Peanuts
2 tsp. sesame or groundnut oil
550g/1lb 4oz mange tout
3 tbsp. soy sauce
Coarse black pepper
1 tbsp/15ml honey
1 tsp. sesame seeds

Method

  1. Toast the peanuts in a frying pan for a few minutes until lightly browned. Remove from the heat and roughly chop. Put to one side.
  2. Heat the oil in a wok or large frying pan. Add the mange tout, soy sauce and pepper. Stir-fry for about five minutes over a high heat, adding a little water if the mange tout begin to stick to the bottom of the pan.
  3. Stir in the honey; cook for a further couple of minutes till the vegetables are just cooked but still crunchy. Stir in the peanuts. Serve with the sesame seeds sprinkled on top. Can be served hot or cold.

Health Tip

Quick cooking in this way helps to preserve the natural goodness of the vegetables. Peanuts and mange tout provide good sources of fibre and potassium. Peanuts provide a nutritious boost being high in protein and heart healthy monounsaturated fatty acids, plus as a wide range of vitamins and minerals.

Cooks Tip

You can use any of your favourite vegetables for this dish, though the best alternatives are green beans and broccoli.
